Cape Heights Limited Release Pinotage
In the Vineyard
The vines for this fruity yet elegant Limited Release Pinotage are cultivated in the Swartland area with its rich granite and shale soils. Harvested at optimum ripeness to ensure fruit-driven notes and soft tannins the grapes are crushed and fermented in stainless steel tanks at 17-22 °C. Pump-over takes place twice daily to wet the cap and aerate the fermenting wine and once daily at the end of fermentation so not to extract too much of the tannins. The wine is fermented down to 5g per litre residual sugar and pressed before being pumped back into stainless steel tanks. This ensures softer tannins overall and no-over extraction of any harsh tannins. Malo-lactic fermentation follows and the wine is kept on the lees until bottling to ensure great mouthfeel.

Opening with plum and blackberry aromas, then on to a rich fruity palate of dark fruit and a very subtle pepper spice

Marinated lamb, chargrilled aubergine and portobello mushrooms.
