Mon Vieux ‘Hell’s Heights’ Sauvignon Blanc – Most of the vines involved are old and/or from mountainous sites. 535 metres up the sheer slopes of the Simonsberg clings a triangular block of Sauvignon Blanc with fantastic elemental exposure, low yields, tight bunches of fruit that are ripe but mineral. The grapes are hand-picked at night.
The wine is naturally fermented in stainless steel then 100% barrel-aged for 6 months in 600L new French demi-muids. It is unfined and very gently filtered.
